Among the best known and appreciated dishes, the original capunsči, bread gnocchi, garlic, cheese and eggs with butter can be mentioned; in addition, agnoli and tortelli di zucca, and tasty, filled paste all’uovo (fojade) along with rice “alla pilota” and mushroom risotto. Together with these, there are also tagliatelle with wild game, hare or duck sauce which all render the first courses both satisfying and flavourful.
Unforgettable in the cuisine of this area surrounded by water are the dishes based on fresh-water fish , prepared either with sauces or grilled: from pike to tench , trout and finally eel which is one of the most sought-after dishes thanks to its particular preparation allowing the fat to be removed and thus making it a light and easily digestible dish even for the most sensitive diners.
In addition, the province of Mantua is well-known for its cured meats, in particular salami and cotechini which, here, are prepared specially with garlic and spices and have a long curing time, making them really unique.
Not to be forgotten are the fruits and vegetables grown following organic methods, the fresh and aged cheeses , as well as the preserves , sauces and jams found widely in the pantries of the area.
Attention must also be given to the wines . Excellent reds and clarets as well as crystalline whites can be found in the wineries of the area, produced in this band of land bordered by Lake Garda; some have obtained recognition as Controlled Denomination of Origin (DOC). In addition, in the areas of Castiglione, Cavriana, Medole, Monzambano, Ponti sul Mincio, Pozzolengo, Solferino and Volta Mantovana interesting Pinot, Riesling, Chardonnay and, for the reds, Merlot, Cabernet and Sauvignon are produced. There’s no lack of white and red wines of high quality brought to perfection in oak casks, in addition to spumanti, dessert wines and grappas. Among the most typical, we can mention: Rubino Doc Garda Colli Mantovani, Chiaretto Doc Garda Colli Mantovani, Bianco Doc Garda Colli Mantovani, Lugana, San Martino della Battaglia.
